And why did we choose that for a name?

The answer is the name eluded us for a while.  I (Bryant) wanted a name that was simple and natural and reflected our relationship with nature.  I was splitting wood in the middle of winter on a lake in Wisconsin early on and we stacked row upon row of firewood.  It dawned on me a stack of wood is manipulated by us but still feels a part of nature and can be really pleasing to look at.  We influence and are a part of nature.  We are finding ways to co-exist with it.  While clearing and splitting fallen trees, we were benefitting ourselves and the trees around.  And we didn't take all of them.  Some stayed behind to serve as part of the natural life cycle of a forest.  We're here to steward and refine our understanding of nature.  A woodstack is a symbol of that relationship.
